This is a very simple overnight oats recipes that is a healthy breakfast or snack that you can make ahead of time and last up to 5 days in the fridge. Yes, meal prepping at its finest! Let’s cover the basis first. What are overnight oats?
Overnight oats is another way of preparing oatmeal. Instead of boiling the oats, overnight oats are mixed with liquid of choice (Milk, water, cream, etc.) and left overnight, giving time for the oats and seed to hydrate and soften.
Simple enough right?
With this quick and easy recipe, you can make a bunch ahead of time and switch up your toppings base of your mood. If you are anything like me, my taste bud changes base off my mood. One day I’m craving salty, the next sweet; so, my toppings will change depending on my mood.
To get started with the base of this recipe you will need the following:
- ½ cup steel cut oats
- 1 tablespoon of flax seeds (can substitute for chia seeds)
- 1 pouch of Just Bloom Chocolate Collagen Coffee Creamer (can substitute for Mocha or Original depending on your flavor profile)
- 1 tablespoon of peanut butter
- ½ cup of water
The steps are as easy as 1, 2, 3.
1-Mix all the ingredients in a container.
2-Cover the container with lid or plastic wrap.
3-Place in the fridge overnight.
Topping can be added ahead of time or before serving. I prefer to add the toppings before serving because if you are not happy with the consistency of the overnight oats, you can add more liquid and mix until your happy with the consistency. Some people like their oats on the dry side while others like a soupier texture.
Now the fun part! Experimenting with different toppings.
Dried fruits and nuts of choice is very simple and adds a crunchy texture.
Here I just added some chocolate coconut chips.
This is one of my hubby’s favorite. Banana chips and walnuts.
Fresh fruit toppings to try:
- 1 tbsp strawberry jam
- ¼ cup diced strawberry
- Crushed peanuts or nuts of choice
- ½ banana sliced
- 1 tbsp Nutella
- Crushed nuts of choice or chocolate chips
